Kim: This is a wonderfully simple dish that can be served in a variety of ways. It makes a great meal on a cool day and is easily served in 20 minutes, or even less if reheated in a microwave!

Assembly Directions:
Brown the ground beef in a skillet with the onion. Meanwhile, in a large bowl, mix the tomatoes, Ro-Tel tomatoes, Taco seasoning, Ranch dressing, water, pinto beans, kidney beans and hominy. Do not drain any of the canned items before adding them. When the beef is cooked, drain it and add it to the soup mixture. Stir to mix well.

Freezing Directions:
Put soup into freezer bag(s). Seal, label and freeze.

Serving Directions:
Thaw. Place soup in a saucepan. Bring to a boil, reduce heat, and simmer for 20 minutes.

Comments:

*= Ro-Tel is a brand of canned tomatoes with chopped jalapeno peppers added.
**= Hominy is found in the canned veggie aisle, and is a type of white corn.

    • I am able to download the file. Sometimes your browser may show you the contents of the file instead of importing it into the Advantage Cooking Software. You can get around it by right mousing on the link for the file and saving the file to your computer. Then you just have to import it from the Recipes tab in the software. Also, under Chrome you should be able to double click on the file after it has downloaded and it should launch Advantage Cooking Software recipe importer.
