Assembly Directions: Place chicken, oil, and garlic in a freezer bag. Seal and shake to mix.
Freezing Directions: Remove excess air from bag. Seal, label and freeze.
Serving Directions: Thaw ingredients over night in the refrigerator. Two hours prior to grilling, add lime juice to freezer bag. Seal and shake to mix. When ready to grill, remove chicken from marinade. Discard marinade. Grill the chicken until juices run clear or internal temperature is 165 degrees.
Comments: We usually serve this on tortillas with Lime Rice (from the Big Book of Freezer Cooking), Mango Salsa (from the Big Book of Freezer Cooking), and black beans. You can also serve this as a sandwich with grilled onions, peppers and some pepper jack cheese slices.
